Superfood Tabouli

Serves 2 to 4
Ingredients:
1 cup seeded and diced cucumbers | ½ cup hemp seeds |
¾ cup minced parsley | 1/3 cup olive oil |
1 tablespoon minced fresh mint | 1/3 cup lemon juice |
2 teaspoons minced fresh garlic | 2 tablespoons celtic sea salt (I prefer pink Himalayan) |
Dash cayenne pepper | ½ cup Jerusalem artichokes, minced |
Directions: mix all ingredients together by hand in a large bowl and serve.
